  • 1 lb boneless skinless chicken breasts, diced
  • 12 oz rotini or penne pasta
  • Sauce:
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 1/2 cups shredded Pepper Jack cheese
  • 1/2 cup grated Parmesan cheese
  • Aromatics & Seasoning:
  • 1 tbsp olive oil
  • 1 small onion diced
  • 3 cloves garlic minced
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • Garnish:
  • Fresh parsley chopped (optional)

Method
 

  1. Instructions:
  2. Step 1 – Cook the Pasta:
  3. Bring a large pot of salted water to a boil.
  4. Cook the pasta according to the package directions until al dente.
  5. Drain and set aside.
  6. Step 2 – Sauté the Sausage:
  7. Heat 1/2 tablespoon of olive oil in a skillet over medium heat.
  8. Add the sliced chicken sausage and cook until browned on both sides, about 5–6 minutes.
  9. Remove from the skillet and set aside.
  10. Step 3 – Cook the Chicken:
  11. In the same skillet, add the remaining olive oil.
  12. Add the diced chicken, season with salt, pepper, and Italian seasoning.
  13. Cook for 6–8 minutes, stirring occasionally, until fully cooked.
  14. Step 4 – Build the Sauce:
  15. Add the diced onion and sauté for 2–3 minutes.
  16. Stir in the minced garlic and cook for 30 seconds until fragrant.
  17. Pour in the chicken broth and heavy cream. Bring to a gentle simmer.
  18. Stir in the shredded Pepper Jack and Parmesan cheese. Mix until smooth and creamy.
  19. Step 5 – Combine:
  20. Add the cooked pasta and sausage back into the skillet.
  21. Toss everything to coat in the sauce.
  22. Let it simmer for 2–3 minutes until thickened slightly.
  23. Step 6 – Serve:
  24. Turn off the heat and garnish with freshly chopped parsley.
  25. Serve warm

Notes:
Add red pepper flakes for extra heat.
Mozzarella or Colby Jack can be used instead of Pepper Jack for a milder flavor.
Feel free to add vegetables like spinach or mushrooms for more texture.
