- Instructions:
- Step 1 – Cook the Pasta:
- Bring a large pot of salted water to a boil.
- Cook the pasta according to the package directions until al dente.
- Drain and set aside.
- Step 2 – Sauté the Sausage:
- Heat 1/2 tablespoon of olive oil in a skillet over medium heat.
- Add the sliced chicken sausage and cook until browned on both sides, about 5–6 minutes.
- Remove from the skillet and set aside.
- Step 3 – Cook the Chicken:
- In the same skillet, add the remaining olive oil.
- Add the diced chicken, season with salt, pepper, and Italian seasoning.
- Cook for 6–8 minutes, stirring occasionally, until fully cooked.
- Step 4 – Build the Sauce:
- Add the diced onion and sauté for 2–3 minutes.
- Stir in the minced garlic and cook for 30 seconds until fragrant.
- Pour in the chicken broth and heavy cream. Bring to a gentle simmer.
- Stir in the shredded Pepper Jack and Parmesan cheese. Mix until smooth and creamy.
- Step 5 – Combine:
- Add the cooked pasta and sausage back into the skillet.
- Toss everything to coat in the sauce.
- Let it simmer for 2–3 minutes until thickened slightly.
- Step 6 – Serve:
- Turn off the heat and garnish with freshly chopped parsley.
- Serve warm
