- Instructions:
- Season the Chicken
- Season chicken breasts on both sides with salt and pepper.
- Sear the Chicken
- Heat olive oil in a large skillet over medium heat. Cook the chicken for 6–7 minutes per side, or until golden brown and cooked through. Remove and set aside.
- Prepare the Sauce
- In the same skillet, reduce heat to medium-low. Add Dijon mustard, Asiago cheese, and heavy cream. Whisk until smooth and simmer for 4–5 minutes, until slightly thickened.
- Return Chicken to the Sauce
- Add the chicken breasts back into the skillet. Spoon the sauce over the chicken and let it simmer for 2–3 more minutes.
- Garnish & Serve
- Sprinkle fresh thyme on top and serve warm with your favorite sides.

You can substitute chicken thighs for a juicier version. Add sautéed mushrooms or spinach for extra flavor and texture. Use freshly shredded Asiago for the best melt and taste.
