- Make Cheesecake Filling
- In a bowl, beat softened cream cheese until smooth. Add powdered sugar and vanilla, mixing until creamy. Freeze the mixture for 15 minutes.
- Shape into Balls
- Scoop the chilled filling and roll into 1-inch balls. Roll each ball in graham cracker crumbs to coat.
- Dip in Peanut Butter
- Warm peanut butter in the microwave for 30 seconds. Dip half of each ball in peanut butter and place on a parchment-lined tray. Freeze for 10 minutes.
- Dip in Chocolate
- Melt chocolate chips and coconut oil until smooth. Dip the other half of each ball into chocolate. Sprinkle with crushed peanuts or chips while still wet.
- Chill & Serve
- Refrigerate for 30 minutes until firm. Serve chilled.

Substitute with crunchy peanut butter for texture.
