Bake Peanut Butter Cheesecake Balls

  • 8 oz cream cheese softened
  • ¼ cup powdered sugar
  • ½ tsp vanilla extract
  • For the Coating:
  • ½ cup creamy peanut butter
  • 1 cup graham cracker crumbs
  • For the Chocolate Topping:
  • 1 cup semi-sweet chocolate chips
  • 1 tbsp coconut oil optional
  • 2 tbsp crushed peanuts or peanut butter chips for garnish

Method
 

  1. Instructions:
  2. Make Cheesecake Filling
  3. In a bowl, beat softened cream cheese until smooth. Add powdered sugar and vanilla, mixing until creamy. Freeze the mixture for 15 minutes.
  4. Shape into Balls
  5. Scoop the chilled filling and roll into 1-inch balls. Roll each ball in graham cracker crumbs to coat.
  6. Dip in Peanut Butter
  7. Warm peanut butter in the microwave for 30 seconds. Dip half of each ball in peanut butter and place on a parchment-lined tray. Freeze for 10 minutes.
  8. Dip in Chocolate
  9. Melt chocolate chips and coconut oil until smooth. Dip the other half of each ball into chocolate. Sprinkle with crushed peanuts or chips while still wet.
  10. Chill & Serve
  11. Refrigerate for 30 minutes until firm. Serve chilled.

Notes

Notes:
Substitute with crunchy peanut butter for texture.
Use almond butter or Nutella for flavor variations.
Add sea salt flakes for a sweet & salty combo.
