  • - 1 lb ground beef
  • - 1 packet taco seasoning
  • - ⅓ cup water
  • - 1 tbsp tomato paste
  • ### Toppings:
  • - 1 cup shredded cheddar cheese
  • - ½ cup diced tomatoes
  • - ¼ cup chopped green onions
  • - Sour cream for garnish
  • - Chopped cilantro optional

Method

  2. Preheat the oven to 425°F (220°C).
  3. In a bowl, toss halved baby potatoes with olive oil, garlic powder, smoked paprika, salt, and pepper.
  4. Place potatoes cut-side down on a baking sheet and roast for 25–30 minutes or until golden and crispy.
  5. Meanwhile, in a skillet, brown the ground beef over medium-high heat.
  6. Drain excess fat, then add taco seasoning, tomato paste, and water.
  7. Simmer until thick and well-coated, about 5–7 minutes.
  8. Remove roasted potatoes from the oven and place on a serving dish.
  9. Top with taco beef mixture and sprinkle with shredded cheese while hot.
  10. Add diced tomatoes, green onions, and a generous dollop of sour cream.
  11. Garnish with cilantro if desired and serve immediately.
