- Instructions:
- Cook Pasta: Boil pasta in salted water until al dente, reserve ½ cup pasta water, and drain.
- Cook Chicken: Heat olive oil in a skillet, add diced chicken, season with salt and pepper, and cook until golden. Remove and set aside.
- Cook Mushrooms: In the same skillet, add butter and sliced mushrooms. Sauté until browned, about 5 minutes.
- Add Garlic: Add minced garlic, cooking for 1 minute until fragrant.
- Deglaze & Sauce: Pour in chicken broth and heavy cream, stirring to combine. Scrape up any browned bits.
- Add Parmesan: Reduce heat, add Parmesan, and stir until melted and sauce thickens.
- Combine: Return chicken and pasta to the skillet, tossing to coat. Add pasta water as needed for a silky sauce.
- Serve: Garnish with parsley and extra Parmesan. Serve hot and enjoy!

For extra vegetables, add spinach, peas, or sun-dried tomatoes. Make it spicy by adding red pepper flakes. Use fresh Parmesan for better melting and flavor. Add a splash of reserved pasta water if the sauce thickens too much.
