  • 1 lb chicken breast diced
  • 8 oz mushrooms sliced
  • 3 cloves garlic minced
  • 1 cup heavy cream
  • ½ cup chicken broth
  • ½ cup grated Parmesan cheese
  • 2 tbsp olive oil
  • 1 tbsp butter
  • Salt and pepper to taste
  • Fresh parsley chopped, for garnish

Method
 

  1. Instructions:
  2. Cook Pasta: Boil pasta in salted water until al dente, reserve ½ cup pasta water, and drain.
  3. Cook Chicken: Heat olive oil in a skillet, add diced chicken, season with salt and pepper, and cook until golden. Remove and set aside.
  4. Cook Mushrooms: In the same skillet, add butter and sliced mushrooms. Sauté until browned, about 5 minutes.
  5. Add Garlic: Add minced garlic, cooking for 1 minute until fragrant.
  6. Deglaze & Sauce: Pour in chicken broth and heavy cream, stirring to combine. Scrape up any browned bits.
  7. Add Parmesan: Reduce heat, add Parmesan, and stir until melted and sauce thickens.
  8. Combine: Return chicken and pasta to the skillet, tossing to coat. Add pasta water as needed for a silky sauce.
  9. Serve: Garnish with parsley and extra Parmesan. Serve hot and enjoy!

Notes

Notes:
For extra vegetables, add spinach, peas, or sun-dried tomatoes.
Make it spicy by adding red pepper flakes.
Use fresh Parmesan for better melting and flavor.
Add a splash of reserved pasta water if the sauce thickens too much.
