  • For the dough:
  • 350 g all-purpose flour
  • 175 ml boiling water
  • 1 tsp salt
  • 20 ml vegetable oil
  • Optional filling if desired:
  • 1 cup grated carrots
  • 1 cup finely chopped cabbage
  • 1 small onion minced
  • 2 cloves garlic crushed
  • Salt and pepper to taste
  • 1 tbsp soy sauce optional
  • 1 tbsp oil for sautéing
  • For frying:
  • 2 –3 cups vegetable oil

Method
 

  1. Prepare the dough:
  2. In a mixing bowl, combine flour and salt. Slowly pour in boiling water while stirring with a spoon. Add the vegetable oil, then knead until smooth and elastic. Cover and let rest for 30 minutes.
  3. Optional filling prep:
  4. If using a filling, heat 1 tbsp oil in a pan. Add onion and garlic, sauté until translucent. Add cabbage, carrots, soy sauce, salt, and pepper. Cook until soft. Let cool.
  5. Roll out the dough:
  6. Divide the dough into equal portions. Roll each into a thin rectangle or circle.
  7. Fill and roll:
  8. Place a spoonful of the cooled filling in the center of each piece of dough. Fold and roll tightly like a spring roll.
  9. Heat the oil:
  10. Pour enough oil into a frying pan to deep-fry. Heat over medium-high heat.
  11. Fry the rolls:
  12. Fry the rolls in batches until golden brown and crispy (about 3–4 minutes per side). Drain on paper towels.
  13. Serve hot:
  14. Enjoy crispy vegetable rolls as a snack, side, or appetizer.

Notes

NOTES
You can add mushrooms, ground chicken, or shrimp to the filling.
To make the rolls gluten-free, use gluten-free flour blend and adjust liquid as needed.
Store leftovers in the fridge in an airtight container and reheat in the oven.
