  • - 1 tbsp baking powder
  • - 1/2 tsp baking soda
  • - 2 tbsp granulated sugar
  • - 1/2 tsp fine sea salt
  • - 1/2 cup 113g cold unsalted butter, cubed
  • - 3/4 cup cold buttermilk
  • - 1 tsp vanilla extract
  • - 1 cup fresh blueberries or frozen, not thawed
  • Optional Glaze:
  • - 1/2 cup powdered sugar
  • - 1 tbsp milk
  • - 1/4 tsp vanilla extract

Method
 

  1. Instructions:
  2. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  3. In a large bowl, mix flour, baking powder, baking soda, sugar, and salt.
  4. Cut in the butter until the mix resembles coarse crumbs.
  5. Add buttermilk and vanilla; mix just until combined.
  6. Gently fold in blueberries.
  7. On floured surface, pat dough into 1-inch thick rectangle. Cut biscuits.
  8. Place on baking sheet. Bake 15–18 minutes or until golden.
  9. For glaze, whisk ingredients and drizzle on warm biscuits.

Notes

Notes:
- Do not overmix to avoid tough biscuits.
- Use frozen berries without thawing for best results.
- Add lemon zest for a fresh flavor twist.
