Method

  2. In a large bowl, whisk the egg, sugar, and lemon zest until pale and fluffy.
  3. Add the softened butter and mix until creamy.
  4. Gradually stir in flour, baking powder, and salt. Mix until a soft dough forms.
  5. Press 2/3 of the dough into a lined and greased springform pan, covering the base and sides.
  6. Pour in your preferred lemon custard or creamy filling.
  7. Flatten the remaining dough and gently place it on top to cover.
  8. Bake in a preheated oven at 180°C (350°F) for 45 minutes or until golden on top.
  9. Cool completely, then dust with powdered sugar and garnish with lemon slices before serving.

Notes

notes:
You can replace part of the flour with almond flour for a nutty twist. For a more citrusy punch, increase the lemon zest or add a bit of fresh lemon juice to the dough.
