- Instructions
- 1️⃣ Prepare the Fries:
- Bake frozen fries according to package directions or prepare homemade fries until golden and crispy. Season with salt.
- 2️⃣ Cook the Veggies:
- In a skillet, heat olive oil over medium-high. Sauté onions, peppers, and mushrooms (if using) until softened, about 5-6 minutes. Remove and set aside.
- 3️⃣ Cook the Steak:
- Season steak with garlic salt and pepper. In the same skillet, cook steak slices for 2-3 minutes until browned and cooked through. Return veggies to the skillet, mix, and remove from heat.
- 4️⃣ Make the Cheese Sauce:
- In a saucepan over medium heat, melt butter, add flour, and whisk for 1 minute. Gradually add milk while whisking until thickened, about 3-4 minutes. Lower heat, add provolone and cheddar, whisk until melted and smooth. Season with salt and pepper.
- 5️⃣ Assemble:
- Place hot fries on a serving platter, top with steak and veggie mixture, then pour cheese sauce generously over the top. Alternatively, sprinkle extra cheese and broil for 2-3 minutes for a bubbly finish.
- 6️⃣ Serve:
- Garnish with fresh parsley or green onions. Serve immediately while hot.

Notes
Use Cheese Whiz instead of homemade cheese sauce for an authentic Philly touch. Add sliced jalapeños for heat. Use sweet potato fries for a healthier twist. Serve with ranch or spicy aioli for dipping.
