- Instructions:
- Preheat the oven to 400°F (200°C). Line a baking dish with parchment paper or grease it lightly.
- In a bowl, whisk lemon juice, zest, minced garlic, olive oil, oregano, paprika, salt, and pepper.
- Add chicken breasts and coat well with the marinade. Let sit while prepping vegetables.
- Toss chopped vegetables in a separate bowl with olive oil, salt, and pepper.
- Arrange chicken in the center of a baking dish. Surround with vegetables. Pour extra marinade over everything.
- Bake for 25–30 minutes or until chicken is fully cooked (165°F internal temperature) and vegetables are roasted.
- Broil for 3–5 minutes at the end for added color and crispness (optional).
- Serve warm with salad, brown rice, or quinoa.
