- Melt butter in a large pot. Sauté onion, carrots, and celery for 5–7 minutes. Stir in garlic, thyme, salt, and pepper.
- Sprinkle flour over veggies. Stir and cook for 1–2 minutes.
- Slowly whisk in chicken broth. Bring to a simmer and cook 10 minutes.
- Add shredded chicken and cream (optional). Let simmer while making dumplings.
- In a bowl, mix flour, baking powder, and salt. Cut in butter, then stir in milk until combined.
- Drop spoonfuls of dough into simmering soup. Cover and cook 15–18 minutes without lifting lid.
- Check if dumplings are cooked through. Garnish with parsley and serve hot.
