  • 1 cup mixed dried fruits raisins, cherries, cranberries
  • 1/2 cup chopped nuts optional
  • Zest of 1 orange

Method

  2. Preheat the oven to 350°F (175°C). Line or grease an 8-inch round cake pan.
  3. In a bowl, whisk flour, baking powder, and baking soda.
  4. In another bowl, whisk melted butter and brown sugar, then add eggs one at a time.
  5. Add orange juice, vanilla extract, and orange zest, whisking to combine.
  6. Gradually fold the dry ingredients into the wet ingredients until just combined.
  7. Fold in the mixed dried fruits and nuts.
  8. Pour the batter into the prepared pan and smooth the top.
  9. Bake for 35-40 minutes or until a toothpick comes out clean.
  10. Cool in the pan for 10 minutes before transferring to a wire rack.

Notes

Notes:
For extra moisture, soak dried fruits in orange juice for 30 minutes before using.
Add 1/2 tsp cinnamon or nutmeg for a warm spice note.
Substitute apple juice for orange juice if desired.
