Instructions:
Preheat oven or grill to 400°F (200°C).
For grill: medium-high heat
For oven: place rack in center
Parboil the potatoes in salted water for 7–8 minutes. Drain and let cool slightly.
In a large bowl, combine shrimp, sausage, corn, and potatoes. Drizzle with olive oil and season with paprika, garlic powder, Old Bay, salt, and pepper.
Toss everything until evenly coated.
Lay out 4 foil sheets. Divide mixture evenly into the center of each.
Top with lemon slices, fold foil over, and seal into tight packets.
Place packets on grill or baking sheet.
Grill: Cook 15–18 minutes, turning once.
Oven: Bake for 20–22 minutes.
Carefully open the foil (watch out for steam). Garnish with parsley and serve immediately.
