  • 1 lb 450g large raw shrimp, peeled and deveined
  • 12 oz 340g smoked sausage, sliced
  • 2 ears corn on the cob each cut into 4 pieces
  • 1 lb 450g baby potatoes, halved
  • 3 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp Old Bay seasoning or Cajun seasoning
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 lemon sliced
  • 2 tbsp fresh parsley chopped (optional)
  • 4 large sheets heavy-duty aluminum foil

Method
 

  1. Instructions:
  2. Preheat oven or grill to 400°F (200°C).
  3. For grill: medium-high heat
  4. For oven: place rack in center
  5. Parboil the potatoes in salted water for 7–8 minutes. Drain and let cool slightly.
  6. In a large bowl, combine shrimp, sausage, corn, and potatoes. Drizzle with olive oil and season with paprika, garlic powder, Old Bay, salt, and pepper.
  7. Toss everything until evenly coated.
  8. Lay out 4 foil sheets. Divide mixture evenly into the center of each.
  9. Top with lemon slices, fold foil over, and seal into tight packets.
  10. Place packets on grill or baking sheet.
  11. Grill: Cook 15–18 minutes, turning once.
  12. Oven: Bake for 20–22 minutes.
  13. Carefully open the foil (watch out for steam). Garnish with parsley and serve immediately.
